On Oct. 29, three tenancies at Red Rock Casino Resort & Spa ended on the same day. Lotus of Siam, Naxos Taverna and the Red Rock Oyster Bar had been run by the same outside partnership since Lotus opened in November 2022 and the other two followed in February 2023. Station Casinos said that starting Oct. 30 it would run the Oyster Bar itself and "continue to offer its signature recipes and dishes that have made it a city-wide favorite," according to 8NewsNow.
The Oyster Bar handoff is the latest step in a pattern that has run all year. This is the resort's 20th anniversary year, and nearly every restaurant change at the Charleston and 215 property in 2026 has given a room to a concept that started in Las Vegas or to a kitchen Station runs itself.
The strategy, in the general manager's words
The resort has explained the plan itself. In a May interview with the Las Vegas Review-Journal, Jordan Seager, Red Rock's vice president and general manager, described the past couple of years this way:
"What we've done, especially in the last couple of years, is continue to refocus our food efforts back into the community."
In the same piece he said Red Rock is "going after owners and operators that love what they do." The founders of one food-court newcomer told the paper the resort "hand-selected these concepts because they're built entirely by locals for the community."
The rest of 2026 follows that plan. Here is how the rooms changed hands.
| Space at Red Rock | Before | 2026 change | Who runs it |
|---|---|---|---|
| Hearthstone's original 6,500 sq. ft. | Closed in 2023 after about a decade | Hearthstone Kitchen & Cellar returned Jan. 30 | Clique Hospitality |
| Food court pizza stall | Side Piece | Good Pie, opened May 11 | Founder Vincent Rotolo |
| Food court burger stall | Fatburger | With Love, Always | Las Vegas-founded smashburger team |
| Food court donut stall | Federal Donuts & Chicken | Randy's Donuts | Inglewood, Calif.-based brand |
| Oyster Bar | Licensed to Bua Food Group | Station Casinos said it would run it starting Oct. 30 | Station Casinos |
| Lotus of Siam and Naxos Taverna | Bua Food Group | Tenancies ended Oct. 29 | Plans to be announced by Station |
January set the template: a Summerlin favorite back in its own room
Hearthstone came first and set the pattern. Station's own announcement called it "the hearth and soul of Summerlin." It came back in its original 6,500-square-foot space with a redesigned dining room, a bigger bar with classic bar games, and a lounge. Seager pointed to the return as his example of the community refocus, noting the restaurant closed in 2023 after a decade and came back to the same space.
The menu is different now. Executive Chef Jason Janson, previously executive chef at Vetri Cucina Las Vegas and a veteran of é by José Andrés, cooks what the announcement calls Americana with subtle Italian inspiration. The menu includes rotisserie prime rib, bucatini carbonara topped with a sunny-side-up egg, a bucket of fried chicken in original or hot honey, and a wood-fired pizza called the "Abe Froman."
For planning purposes:
- Dinner: 4 to 10 p.m. Sunday through Thursday, and 4 to 11 p.m. Friday and Saturday
- Brunch: Saturdays and Sundays, 10 a.m. to 3 p.m., with $25 bottomless mimosas and bloody marys
- Raw bar: $1 Oyster Wednesdays, plus a chilled half Maine lobster tail
- Reservations: through HearthstoneLV.com or (702) 797-7344
With Hearthstone's raw bar running, Red Rock now has two places serving oysters on its restaurant row, and Station's house team will run one of them.
Spring took the same approach to the food court
In May the resort rebuilt three food-court stalls. Seager's quotes about the plan come from the Review-Journal's coverage of this round.
Good Pie opened its third Southern Nevada location on May 11 in the former Side Piece spot, Fox5 reported. Founder Vincent Rotolo grew up in an apartment above John's of Bleecker Street in Greenwich Village and made his first pizza in its coal-fired ovens at 12. He described his Red Rock shop to the Review-Journal as "embracing the past, present and future of pizza."
With Love, Always has the most hometown story of the group. It opened in October 2024 in a 12-seat corner of a strip mall at 6441 N. Durango Drive and added a second shop at The Bend, 8670 W. Sunset Road. The Red Rock stall, in the former Fatburger space, is its third. Co-founder Drew Belcher told the Review-Journal that the burger is "a classic American cheeseburger using super fresh, high-quality ingredients": two patties of just under 3 ounces of Black Angus each, formed fresh every morning and served on a hinged Martin's potato roll. Red Rock's Quick Eats page lists it with the rest of the food court.
Randy's Donuts is the exception. The Inglewood, California brand took over the former Federal Donuts & Chicken stall as its fifth valley location, and Red Rock's dining page lists it as open next to Good Pie.
Why the Oyster Bar was the one that came back to Station
Station's Sept. 1 statement handled the three restaurants on Red Rock's restaurant row differently. Lotus of Siam and Naxos Taverna are leaving. The Oyster Bar is staying, and Station runs it now.
Vital Vegas explained the reason. All three concepts were run at Red Rock by Bua Food Group, and the Oyster Bar had been licensed to that operator so it could share Naxos Taverna's kitchen. When the Naxos tenancy ended, the Oyster Bar's operating arrangement went with it, so Station is taking the bar back and keeping its recipes and menu. As 8NewsNow reported, Station stressed that the Oyster Bar is not closing.
This fits the rest of the year. Hearthstone went back to the operator that built its following. The food-court stalls went mostly to founders who started in Las Vegas. The Oyster Bar goes back to the company whose name is on the building, with the menu it says it is keeping.
For the other two rooms, Station said in September that "plans for the other two restaurants will be announced in the coming weeks." Going by the rest of 2026, the next tenants are likely to come from the same local operators and in-house teams.
Where Lotus of Siam's Thai cooking still runs
Lotus of Siam itself is still open in Las Vegas, with two locations east of the 15:
- The original, which Saipin Chutima opened in Commercial Center in 1999. It reopened in May 2026 at 953 E. Sahara Ave., Suite A5.
- Flamingo Road, at 620 E. Flamingo Road, which opened in December 2017.
Saipin Chutima won the James Beard Award for Best Chef: Southwest in 2011, and the Sahara Avenue room is where that reputation started.
Station's southwest food hall is going through the same reshuffle
Red Rock isn't the only Station property shuffling tenants this fall. At Durango Resort, the Eat Your Heart Out food hall lost Uncle Paulie's Deli on Sept. 30, and Yu-Or-Mi Sushi and Vesta Coffee Roasters are scheduled to close Nov. 10, Eater Vegas reported. Earlier in the year, Villa's Tacos replaced Marc Vetri's Fiorella Pasta Bar there. It opened Aug. 15 at 6915 S. Durango Drive, the taqueria's first location outside California.
Across both resorts, Station has spent 2026 changing who runs its restaurant rooms. At Red Rock, every completed move so far except the donut stall has gone to an operator that started in this valley or to Station's own kitchen.
